Healthy 3 Ingredient Pancakes | Recipe


Tasty, filling and healthy. These pancakes are basically porridge in a different form. With only a few ingredients these are so easy and quick to whip up in the morning! You will also need a blender (I used a nutribullet).

The banana makes a brilliant egg substitute in this recipe. What I love about this guilt free breakfast is that it's low in fat and has zero cholesterol. Make sure to save this recipe for pancake day in February! 

Ingredients

    • 1 cup of oats
    • 2/3 cup of oat milk (or other milk alternative)
    • 1 medium banana or 3/4 of a large banana (make sure you use a spotty one!)
    • Optional: dairy free butter or coconut oil for greasing the frying pan
    • Toppings: Whatever you want! I chose agave nectar, more banana and frozen berries

    Method

    • Blend the oats into an oat flour using a blender/processor.
    • Add the banana and milk.
    • Blend until smooth. Add more milk if you want a thinner consistency.
    • Heat a frying pan on a medium to high setting. Add some dairy free butter or coconut oil to prevent the pancakes from sticking (unless you have a good non stick pan).
    • Add the batter!
    • Once cooked add some tasty toppings, healthy or not healthy (I won't judge). I recommend agave nectar or the Tesco Finest dark chocolate spread to sweeten things up

    Delicious Easy Nut Roast | Recipe

    Today's recipe is one you are going to love! It is a scrumptious nut roast.

    This is an easy, hassle free and tasty alternative to meat. Perfect on a relaxing Sunday afternoon or as a festive feast. Even my parents were shocked at how good it tasted! With Christmas right around the corner, mixed nuts are super cheap in supermarkets right now. So why not shake up your typical Sunday roast? Go on... you know you want to.


    I had a lovely afternoon preparing this meal with my family, it happened to be world vegan day too! Though I did spend most of the time snapping away pictures for this post...

    Okay, so how did we make this deliciousness? The recipe was adapted from The Vegan Society's easy nut roast and I am absolutely in love with how simple it is! We had this served with roast potatoes, roasted parsnips, carrots, sprouts and gravy. Mmm mmm mmm.

    Serves 4-5

    Ingredients

    • 1 leek, chopped
    • 30 ml sunflower oil
    • 2 tsp yeast extract in 1/4 pint hot water
    • 225g mixed nuts (we used almonds, pecans, walnuts, cashews and brazil nuts)
    • 2 tbsp ground almonds
    • 100g wholemeal breadcrumbs (we used gluten free)
    • 1 tbsp sage
    • 1/2 tsp cayenne pepper
    • Salt and pepper to taste
    • Sunflower seeds (optional)

    Method

    1. Pre-heat oven to 180C/350F/gas mark 4
    2. Saute the leek in sunflower oil (or whatever oil you prefer) until soft, not browned.
    3. Put the mixed nuts into a food processor and pulse until they are chopped into a mixture of smaller and finer pieces.
    4. Combine all of the ingredients together; the mixture may be slightly slack. Turn into an oiled ovenproof dish and bake for 30 minutes until golden brown. You can top with sunflower seeds before baking if you want! I love the extra texture it gives.

    New Flat


    I am reposting some of my favourite blog posts from my old blog. This was from July 2015.

    From a cave-like student flat to what feels like a gleaming palace, I am now settled into my new flat. The word settled meaning finally having internet. I had to spend a good few weeks waiting for it to be installed and oh boy, I did not realise how much I rely on it. Instagram, Facebook and Twitter was accessible through my phone but blogger was a big no. At least it gave me time to think about what I really want to do with my blog and upcoming posts.

    A new flat means serious homeware shopping. Anyone else get more excited about homeware shopping than clothes shopping? I bought this very instagramable jar and straw from a country chic shop in Cornwall whilst visiting family. Perfect for juices, iced coffee or simply water. I find them much more satisfying to drink out of, guilty pleasure! 


    Next have a beautiful range of bedding and in the end I decided on a grey, white and yellow colour scheme. Different from my usual pink and white but I really love it. Fresh and bright with cushions (also from Next) and a grey throw to make it feel cosy.


    The fireplace in my room is my favourite part of the flat. It will probably get changed a billion times but I'm really happy with the way it looks at the moment. The plants are from IKEA along with the white lantern and pots. I love having snippets of inspiration lying around to brighten up my day so I bought the postcards from Paperchase. My favourite is "the world is your oyster". A great morning pick me up!
