This is an easy, hassle free and tasty alternative to meat. Perfect on a relaxing Sunday afternoon or as a festive feast. Even my parents were shocked at how good it tasted! With Christmas right around the corner, mixed nuts are super cheap in supermarkets right now. So why not shake up your typical Sunday roast? Go on... you know you want to.
I had a lovely afternoon preparing this meal with my family, it happened to be world vegan day too! Though I did spend most of the time snapping away pictures for this post...
Okay, so how did we make this deliciousness? The recipe was adapted from The Vegan Society's easy nut roast and I am absolutely in love with how simple it is! We had this served with roast potatoes, roasted parsnips, carrots, sprouts and gravy. Mmm mmm mmm.
Serves 4-5
Ingredients
- 1 leek, chopped
- 30 ml sunflower oil
- 2 tsp yeast extract in 1/4 pint hot water
- 225g mixed nuts (we used almonds, pecans, walnuts, cashews and brazil nuts)
- 2 tbsp ground almonds
- 100g wholemeal breadcrumbs (we used gluten free)
- 1 tbsp sage
- 1/2 tsp cayenne pepper
- Salt and pepper to taste
- Sunflower seeds (optional)
Method
- Pre-heat oven to 180C/350F/gas mark 4
- Saute the leek in sunflower oil (or whatever oil you prefer) until soft, not browned.
- Put the mixed nuts into a food processor and pulse until they are chopped into a mixture of smaller and finer pieces.
- Combine all of the ingredients together; the mixture may be slightly slack. Turn into an oiled ovenproof dish and bake for 30 minutes until golden brown. You can top with sunflower seeds before baking if you want! I love the extra texture it gives.
